Rows marked FSIS come from USDA Food Safety and Inspection Service charts; every other time is our own typical range for a conventional oven or a steamer. Ovens vary, a fan oven cooks faster, and a crowded tray steams instead of roasting, so check early. For meat, poultry and fish, use a food thermometer and cook to the temperature shown. Food-safety information, not professional advice.

An oven cooking times chart you can search

Recipes rarely agree on how long anything takes in the oven, and the packet has usually gone in the bin. This oven cooking times chart puts the everyday answers in one searchable table: chicken breasts, thighs and wings, pork tenderloin, sausages and bacon, salmon and white fish, roast potatoes and a dozen other vegetables, with the oven temperature in °F, °C, fan and gas mark. A second half of the chart gives vegetable steaming times and a few steamed favourites such as idli, dhokla and momos.

Pick a food, or tap any row of the chart, to see the time, the oven setting, how to prepare it and how to tell when it is done. Rows marked FSIS come from the USDA Food Safety and Inspection Service; the rest are our own typical ranges, so treat the low end as the time to start checking.

How to use the Oven & Steamer Cooking Time Chart

  1. Choose a food from the list, or type in Search the chart (for example “salmon” or “potato”).
  2. Use Show to see only oven or only steamer rows.
  3. Tap a row to see its oven temperature in °F, °C, fan and gas mark, how to prepare it and when it is done.
  4. Preheat the oven fully, start checking at the shorter time, and use a thermometer for meat, poultry and fish.

Oven temperature chart

A fan (convection) oven cooks faster, so set it about 20 °C (25 °F) lower than a conventional one, or keep the temperature and check earlier.

Roasting vegetables: time and temperature

  • Most vegetables roast best at 400–425 °F (200–220 °C). Lower temperatures soften them without browning.
  • Cut pieces to the same size, about 1 inch (2.5 cm), so they finish together.
  • Toss in just enough oil to coat, and spread them in a single layer with space between; a crowded tray steams.
  • Turn them once halfway through. Dense roots (potatoes, carrots, parsnips) take 25–40 minutes; tender ones (asparagus, peppers, broccoli) 10–20.
  • For an air fryer, start from these times and use the air fryer conversion calculator. To use a different oven temperature, the cooking time adjuster rescales the time.

Steaming and food safety

Steaming times start when steam is rising steadily, with the lid on and the food in a single layer above the water. Vegetables are done when a knife goes in easily but they are still bright; overcooked greens turn olive. The UK Food Standards Agency advises that frozen vegetables such as peas and sweetcorn be cooked thoroughly before eating. For meat, the safe minimum internal temperatures from the USDA are 165 °F (74 °C) for all poultry, 160 °F (71 °C) for mince and sausages, and 145 °F (63 °C) for whole cuts of pork, beef and lamb and for fish. Large joints are covered by the roast cooking time calculator and steaks by the steak cooking time calculator.

Oven & Steamer Cooking Time Chart FAQ

How long do I bake chicken breast in the oven?

The USDA chart gives 20 to 30 minutes at 350 °F (180 °C) for boneless breast halves of about 4 oz, and 30 to 40 minutes for bone-in ones. At 425 °F (220 °C) a 6 to 8 oz boneless breast takes about 18 to 25 minutes. It is done at 165 °F (74 °C).

How long does salmon take in the oven?

About 12 to 15 minutes at 400 °F (200 °C) for a 1-inch fillet, and 8 to 10 minutes for thinner pieces. It is done at 145 °F (63 °C), or when the flesh is opaque and flakes easily.

What temperature should I roast vegetables at?

400 to 425 °F (200 to 220 °C, fan 180 to 200 °C, gas mark 6 to 7). Cubed potatoes take 30 to 40 minutes at 425 °F, broccoli 15 to 20, and carrots 25 to 35.

How long do I steam broccoli?

Five to seven minutes for florets, until tender-crisp and still bright green. Cauliflower takes 6 to 8 minutes and carrot slices 6 to 8.

How long does bacon take in the oven?

About 15 to 20 minutes at 400 °F (200 °C) in a single layer on a lined tray, depending on thickness and how crisp you like it.

Why does my food take longer than the chart says?

Ovens often run cooler than the dial, a crowded tray cools down, and food straight from the fridge takes longer. An oven thermometer and checking from the shortest time solve most problems.
